You know, I’ve done the Maryland crab cake tour and really was inspired by Damian who’s going to be coming on here. was inspired a couple years ago right here. I had the mayor on the governor and all of that right in this very, that police commissioner Harrison. Everybody’s been here. And I was inspired to like, this is a failed lease crabcake. And this is among the world’s most delicious things. I will tell you. And I thought I could take this tour and do it in different places and have crab cakes, but for me at the holidays, crab cakes and shipping and I like this is the most wonderful time of the year for me, right? So we get a tree out of this next year, I will build a 32nd anniversary. But I’ve done crab cakes, August I did 30 crab cakes in 30 days a year ago. This year. I did 31 crab cakes and 31 days. This next year I’m going to do oysters. Okay, I’m going to do 32 Oysters anything in 32 days. Okay, probably going to begin on July 31. Because only 31 days in August. So I have to either go to September 1 or back into July, but I’m gonna do oysters this year. And then we’re gonna do these. We’re I want to treat I want to make next year special.

So as well as the crabcake tell her Jamie Baptists crabcake and about where this comes from, because when I brag on your crabcakes and brag on the shipping, and this is this is Baltimore man and when I had Broderick so you’re talking about Baltimore, you have no idea. This is an iconic holiday treat. And she’s about to eat. How many crab cakes have you had million?

I probably have not had a million, but I’ve had quite a few dishes with crab in them. Yes, but you’re not a connoisseur and then a connoisseur I mean well. I’ve had some good crab cakes. I can you know tell some different places where they are so you ever had a memorable crab kickin and had a member of crab Crab cake? Yes. And

I think the thing that makes ours different is number one, we use a lot of Maryland meats so the Maryland crab meat is sweeter and it does have that the fat in the Maryland crab has that mustardy flavor naturally. So you do get more of that in our crabcake and we use only the jumbo lump. My mom started making this, you know back in the 1980s 80s When the processors began separating, really separating out the meat into the different grades, so you had the claw you had what they called regular, special special was what they normally did a straight pick. So they pick the body of the crab and then they stuck all the lumps on top. So if they pick up all the

chips, and she fried them in a pan, say, mayonnaise, mustard, dry mustard, some celery seed, maybe a little old bay J Do you know and that’s how we did it. Right? More of a salty flavor because my back my mom loves salt. The mom was so southern Abbeville South Carolina she loved everything fried everything salty. So that’s kind of how the salmon cakes were salty to That’s my mom made him that way this

There’s nothing about this that salty. I would say it’s East Baltimore saltier credit. It’s more of an old baby just beat flavor. Jao This is no different flavor.

Yes, it’s creamy. And but it’s a perfectly sweet mustard accompaniment to the to the Maryland crab. And what what was unusual is everybody made a crab cake a little flat patty. And she wanted to make sure that the lumps did. So So what she did is she made it big and round so that the lumps would not break when she cooked it and she didn’t know if it was good. There was a higher price point whether or not that was really going to take off. And not only did it take off. Everybody makes that shape. crabcake now, so yes. And they never used to until she really started pushing it. So that’s why my mother made them flatten. Yes, right. Everybody made a flat. If you look at the old cookbooks, ever all of them were flattened,

or they looked like cod fish cakes, like, oh, you know everything with a little patty and maybe would fit on a sandwich better that way.

And we and we actually had a machine here in the 1960s where we would put the body meeting and the claw and that because the plough was really sweet. And you know, you would mix that up and we literally stuck at the top like sausage making and it would come through this machine and press these little patties out. And we could get a lot of patties out. And those were our regular crab cakes when she started. These have to be handmade. Oh yeah, they were delicious. And we sold load, same slurry. Same Same same recipe actually. It was more just the mayonnaise, the parsley and some seasoning

for sure it’s balsamic and but we we get this little tiny Sweet Tomatoes because the Maryland tomatoes in season are so deliciously sweet. And it’s hard to find that the rest of the year June and July you know, you get them and then they’re gone. I’m so but this is the closest you kind of get to that nice tomato and sweet together that sweet tomato. So we’ve been using those for a while now and it works pretty well.

I put it down a little olive oil and let it get up. I like to crispy on it. I love to crunch. So that’s why I would murder why’s it but for me with it. You know? I guess I don’t know. I love it. Her parents did this illicitly. lawlessly back in the 1980s and her sister one $500 and a scratch off. Her sister was like 10 years old now. Didn’t tell mom didn’t tell dad only told her sister, my wife. And they the neighbors found out they got like the whole deal. And I said I just told Johnny’s crazy. Don’t do it.
